Caribbean stud poker is a table game with ties/similarity to another popular poker variation called five card stud. Caribbean stud poker is actually played against the house, whereas most forms of poker are against other players. Unfortunately for the player, there is no bluffing so an element of skill to win in the long run is removed.
Since you're playing against a dealer the scoring is based on a points system rather than a chip pot. For example;

Royal flush 100 to 1 
Straight flush 50 to 1 
Four of a kind 20 to 1

You can also win jockpot prizes, so there is an added bonus or thrill to the game.

In the UK or Europe it is officially known as "Casino Five Card Stud Poker", be careful as many rules and payouts are different.
